- Salad Potatoes - 24.7 oz
- Dry White Wine - 2 fl oz
- Chicken Broth - 7 fl oz
- Dijon Mustard - 0 fl oz
- Malt Vinegar - 2 fl oz
- Olive Oil - 2 fl oz
- Sausages - 4.1 oz
- Tarragon - 0.4 oz
- Scallions - 0.4 oz
- Parsley - 0.4 oz
- Gruyère cheese - 2.1 oz
- Green Butter - 4 stalks
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Steam the potatoes using salted water. Keep them steaming for thirty minutes. Do not let them fall apart. While the potatoes are cooking, boil the chicken broth with the white wine until slightly more than half has evaporated.
Step 2
Whisk the mustard with the vinegar, starting with a few drops, then slowly add the olive oil while continuing to whisk the sauce. Whisk until smooth.
Step 3
Slice the cooked potatoes into 3 mm thick rounds and place them on a large plate. Drizzle with the chicken broth, season with salt and pepper on both sides. Let the broth soak in for about five minutes. Drain any excess broth. Boil the sausages in the potato water. Remove them from the water as soon as they are heated through and slice them into thin rounds. Combine with the potatoes. Sprinkle with herbs and cheese. Dress with the sauce. Gently mix everything together. Arrange the salad leaves on plates and top with the salad.
