Potato Salad with Tuna and Beans

Ingredients

  • New Potatoes - 17.6 oz
  • Olive Oil - 4 tablespoons
  • Meyer Lemon Juice - 1 tablespoon
  • Mild Chili Spice - ½ teaspoon
  • Garlic - 1 clove
  • Canned Baby Beets - 14.1 oz
  • Spanish onions - 1 head
  • Parsley - 1 bunch
  • Canned tuna in its own juice - 7.1 oz
  • Green Butter - 3.9 oz

Step by Step guide

Step 1

Boil the young potatoes in their skins and peel them.

Step 2

While the potatoes are boiling, prepare the dressing. In a deep bowl, mix the olive oil, lemon juice, chili powder, and minced garlic.

Step 3

Cut the cooled and peeled potatoes into small cubes. Drain any excess liquid from the beans. Thinly slice the onion. Finely chop the parsley. Mix all the ingredients and pour the dressing over them.

Step 4

Drain the excess liquid from the can of tuna and flake the fish with a fork. Then add it to the vegetables and mix well.

Step 5

On a large plate, arrange the washed and dried lettuce leaves and place a small mound of the prepared salad on each leaf. Drizzle with olive oil.
