Potato Sauté

Ingredients

  • Butter - 3.2 oz
  • New Potatoes - 16 pieces
  • Thyme - 1 sprig
  • Garlic - 1 clove
  • Salt - to taste
  • Olive Oil - 1 tablespoon
  • Ocean salt - to taste

Step by Step guide

Step 1

Place the potatoes in a pot, cover with cold water, add thyme, garlic, and a pinch of salt. Cover with a lid and bring to a boil over high heat, then reduce the heat to medium and simmer for 20 minutes (do not bring to a full boil).

Step 2

Check the potatoes by piercing one with a sharp knife: it should go in easily but with some resistance (the potatoes will need further cooking after this). Drain the water and let cool.

Step 3

Cut each potato in half, then slice into 1 cm thick rounds. Heat the oil in a large skillet over medium heat until it begins to shimmer. Place the potatoes in the skillet, spreading them evenly, and season with salt.

Step 4

Sauté for 3–6 minutes until they are golden brown. Flip the potatoes with a spatula, season again with salt, and cook for another 2–3 minutes until the other side darkens.

Step 5

Add the butter and let it melt. Shake the skillet to coat the potatoes evenly with the butter, then transfer the potatoes to paper towels. Sprinkle with sea salt and serve hot.
