Description
Some types of chorizo can become tough if cooked too long. To prevent this, cook the slices with the bacon, then remove and set aside, and return the chorizo to the skillet 10 minutes before serving.
Ingredients
- Pork fat - 1.4 oz
- Chorizo - 1.8 oz
- Bacon - 3.5 oz
- Salad Potatoes - 3 lbs
- Parsley - 0.7 oz
- Garlic - 1 clove
- Salt - to taste
Step by Step guide
Step 1
Melt the fat with the oil in a pot or large skillet — large enough for the potatoes to lay in a single layer. Add the chorizo and bacon and cook over medium heat, stirring, for a few minutes.
Step 2
Add the whole peeled potatoes. Season with salt and cook over low heat, shaking the skillet, for 45–60 minutes, until the potatoes are golden brown.
Step 3
When the potatoes are ready, sprinkle them with parsley and garlic and leave on the stove for a few more minutes. Transfer to a warm dish and serve immediately.
