- Salad Potatoes - 3 lbs
- Chorizo - 6 pieces
- Green peppercorns - 6 pieces
- Bay leaf - 1 piece
- Onion - 1 piece
- Paprika - 2 teaspoons
- Garlic - 2 cloves
- Olive Oil - 2 tablespoons
Step by Step guide
Step 1
Heat the oil in a skillet, add the garlic, slightly crushed with the flat side of a knife blade. Cook, stirring, until it starts to darken. Remove the skillet from the heat and stir in the paprika, then pour the contents of the skillet into a heavy-bottomed oven-safe pot.
Step 2
Pour in 1.5 liters of water, add the onion, bay leaf, black pepper, and chorizo, and bring to a boil. Reduce the heat, cover, and simmer for 1 hour.
Step 3
Make circular cuts in each potato with the tip of a knife, then add them to the pot and add enough water to cover the potatoes. Salt to taste. Cover the pot again and cook for another 45 minutes. Remove the pot from the heat and let it sit covered for 5 minutes before serving.
