- Salad Potatoes - 31.7 oz
- Olive Oil - 1½ cups
- White bread - 1.8 oz
- Corn Flour for Polenta - 0.9 oz
- Paprika - ½ teaspoon
- Sole fillets - 24.7 oz
- Wheat Flour - 2 tablespoons
- Chicken Egg - 1 piece
Step by Step guide
Step 1
Place the potatoes in a pot with cold salted water, bring to a boil, then drain.
Step 2
Place the potatoes on a baking sheet, drizzle with olive oil, and mix thoroughly. Spread the potatoes in a single layer, sprinkle with salt. Bake for 35 minutes, turning occasionally, until golden brown.
Step 3
Mix the bread crumbs, corn flour, and paprika. Dip the fish fillet in the mixture, shake off the excess, and coat in egg white, then dip again in the crumb mixture.
Step 4
Place the fish on the baking sheet, then drizzle each fillet with oil. Bake for 12-15 minutes at 428°F until cooked through. Serve with potatoes and pea puree.
