Pozharskiye cutlets from 'The Book of Delicious and Healthy Food'
Ingredients
- Poultry - 2 lbs
- White bread - 3.5 oz
- Milk - ½ glasses
- Breadcrumbs - 1.8 oz
- Butter - 3.5 oz
- Vegetable Oil - 1 fl oz
- Salt - to taste
- Vegetables - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Soak the bread in milk.
Step 3
Separate the chicken meat from the bones.
Step 4
Pass the meat, chicken skin, and white bread through the meat grinder twice.
Step 5
Add a couple of tablespoons of room temperature butter to the minced meat and mix well. Season with salt to taste and stir.
Step 6
Shape the minced meat into patties.
Step 7
Coat the patties in breadcrumbs.
Step 8
Fry the patties in vegetable oil on both sides. Cook them for 4–5 minutes until a nice crust forms.
Step 9
Place the patties in an oven preheated to 392°F for 15 minutes. If you don't have an oven available, simply cover the skillet with a lid and cook the patties on low heat for about 15 minutes.
Step 10
Melt the remaining butter. Drizzle the melted butter over the cutlets just before serving.
Step 11
Blanched green peas, beans, cauliflower, and boiled potatoes make excellent side dishes for Pozharsky cutlets.
