Description
Pozharsky Cutlets
Ingredients
- White bread - 3.5 oz
- Poultry - 2 lbs
- Milk - 4 fl oz
- Breadcrumbs - 2 tablespoons
- Vegetable Oil - 2 fl oz
Step by Step guide
Step 1
Scald the chicken, gut it, and rinse it. Separate the meat from the bones along with the skin, pass it through a meat grinder, then add the white bread soaked in milk, grind it again, add a bit of warmed oil, season with salt, and mix thoroughly.
Step 2
Shape the resulting minced meat into small cutlets and coat them in breadcrumbs.
Step 3
Fry the prepared cutlets in oil on both sides in a preheated skillet for about 4–5 minutes until a lightly browned crust forms.
Step 4
After that, place the skillet with the cutlets in the oven for 5 minutes or cover with a lid and leave on low heat for a while.
Step 5
When serving, place the finished cutlets on a dish and drizzle with melted butter. You can serve various vegetables as a side dish: green peas, beans, cauliflower, previously boiled and dressed with oil, as well as fried potatoes.
