- Burger Patty - 42.3 oz
- Barbecue sauce - 4.2 oz
- Mayonnaise - 4.2 oz
- Spanish onions - 9.9 oz

- Pickled garlic - 2.8 oz
- Cheshire Cheese - 5.6 oz

- Brown Sugar - 1.1 oz
- Red Wine Vinegar - 0 fl oz
- Red Grape Juice - 1 fl oz

- Quail Egg - 4 pieces
- Mustard Greens - 0.7 oz
- Olive Oil - 5 fl oz
- Sugar - 0.2 oz
- Meyer Lemon Juice - 0 fl oz
- Garlic - 1 clove

Step by Step guide
Step 1
Whisk the quail egg yolks with mustard, stirring continuously.
Step 2
Slowly drizzle in the olive oil and whisk until emulsified.
Step 3
Add all remaining ingredients (sugar, 2 g of salt, lemon juice, garlic, and paprika) and mix.
Step 4
Finely chop the onion (200 g), heat the brown sugar in a pan until caramelized. Add the onion and wait until it becomes translucent.
Step 5
Add the remaining ingredients (vinegar, red wine, and salt) and reduce until it reaches a jam-like consistency.
Step 6
For the patty, use beef chuck or other cuts with sufficient fat content (marbled).
Step 7
Separate the fat from the meat. Grind the meat once on a medium grind and the fat twice, then mix them together.
Step 8
Form a patty with a diameter of 12-15 cm and cook for 1.5-2 minutes on each side.
Step 9
Slice the bun in half and toast it in a pan cut side down.
Step 10
Spread barbecue sauce on the top half and homemade mayonnaise on the bottom half.
Step 11
Layer with onion rings (10 g), the patty, caramelized onion, cheddar cheese, tomatoes, lettuce leaf, and ginger.
Step 12
Close with the top half of the bun.
