Ingredients
- Olive Oil - 3 tablespoons
- Garlic - 3 cloves
- Citrus Zest Mix - 1 teaspoon
- Pasta shells - 8.8 oz
- Pumpkin - 2 pieces
- Orange Bell Peppers - 1 piece
- Broccoli - 8.8 oz
- Marinated cherries - 2 pieces
- Scallions - 2.5 oz
- Fresh basil leaves - 1 bunch
- Grated Pecorino Pepato Cheese - to taste
Step by Step guide
Step 1
Mix the oil, garlic, and lemon zest in a small bowl. Set aside.
Step 2
Cook the pasta in a large pot of boiling salted water according to the package instructions. Add the pumpkin and bell pepper 4 minutes before the cooking time is up. Add the broccoli 3 minutes before the cooking time is up. Drain the pasta and vegetables, leaving half a cup of the cooking water.
Step 3
Return the pasta to the pot, add the tomatoes, green onions, basil, the oil mixture, and pour in the reserved cooking water.
Step 4
Cook over medium or low heat until the tomatoes are heated through. Optionally, serve with Parmesan cheese.
