  • Rice Vinegar for Sushi - 2 tablespoons
  • Musk melon - 1½ pieces
  • Vegetable Oil - 4 teaspoons
  • Sugar - 1 teaspoon
  • Salt - ¼ teaspoon
  • Arugula - 2.5 oz
  • Watermelon - 1 piece
  • Prosciutto - 8 slices
  • Ground Black Pepper - ½ teaspoon

Step by Step guide

Step 1

Finely chop half of the muskmelon to make 1 cup. Transfer to a blender. Add vinegar, oil, salt, and sugar, and blend until smooth.

Step 2

Arrange the diced honeydew and muskmelon on plates. Sprinkle with chopped arugula and toss. Add the sliced prosciutto and drizzle with the vinaigrette. Top with freshly ground black pepper.
