Ingredients
- Pumpkin - 10.6 oz
- Avocado - 1 piece
- Onion - 1 piece
- Carrot - 1 piece
- Orange Juice - 7 fl oz
- Ground Star Anise - to taste
Step by Step guide
Step 1
Cut the pumpkin into random pieces. Place on a baking sheet, add star anise and olive oil. Mix and put in an oven preheated to 180–392°F for 20 minutes. Then take the pumpkin out of the oven and set aside until step 3.
Step 2
Peel the avocado and set aside until step 4.
Step 3
Pour olive oil into a pot. Finely chop the onion and carrot. Sauté the onion and carrot for 5 minutes. Then add the pumpkin and pour in the orange juice. Add enough water to cover the vegetables. Cook for 15 minutes on low heat. Add salt and pepper.
Step 4
Add the avocado to the pumpkin. Blend the dish in a blender until smooth.
