You can also add your favorite vegetables, such as potatoes or turnips, which will make it just as delicious, if not more filling. You can also substitute the onion for a regular onion and add any herbs. This is a very simple dish that will delight and surprise with its mix of flavors and aromas.
Ingredients
- Pumpkin - 1 piece
- Eggplants - 3 pieces
- Potato - 1 piece
- Orange Bell Peppers - 1 piece
- Scallions - 1 bunch
- Vegetable Oil - 3 fl oz
- Mushroom seasoning - to taste
- Salt - 1 tablespoon
- Herbs - to taste
Step by Step guide
Step 1
Prepare the vegetables (if the tomatoes are small, use 2).
Step 2
Cut the eggplant into cubes.
Step 3
Place them in a pot where everything will be cooked together.
Step 4
Cut the bell pepper into strips.
Step 5
Add it to the eggplants.
Step 6
Cut the tomato into strips or cubes (not finely).
Step 7
Also add it to the pot with the chopped vegetables.
Step 8
Chop the green onion coarsely.
Step 9
Add the onion to the other vegetables.

Cut the pumpkin in half and scoop out the seeds with a spoon.

Peel and cut into cubes.

Now the vegetables are ready for cooking.

Mix the vegetable mixture in the pot and place it on the heat, adding half of the oil.

Season the pumpkin with vegetable seasoning, add the oil to the pan, and fry until semi-cooked.

When the vegetables in both containers are almost ready, transfer the pumpkin to the pot with the other vegetables.

Gently mix and salt everything together (to taste), then simmer covered for about 10 minutes.

Serve in portions, garnished with herbs.
