Description
Pumpkin Gnocchi with Meatballs
Ingredients
- Wheat Flour - 7.1 oz
- Pumpkin - 15.9 oz
- Chicken Egg - 3 pieces
- Parmesan Cheese - 1.1 oz
- Lean Beef - 8.8 oz
- Garlic - 3 cloves
- Onion - 1 head
- Milk - 1 fl oz
- Passata Tomato Sauce - 1.4 oz
- White bread - 1 slice
- Olive Oil - 1 fl oz
- Mild Chili Spice - 1 piece
- Vegetable Oil - 0 fl oz
- Butter - 1.8 oz
- Paprika - to taste
Step by Step guide
Step 1
Preheat the oven to 356°F. Cut the pumpkin flesh into pieces, sprinkle with paprika and salt, and place in the oven for 30 minutes, having greased the baking sheet with vegetable oil and covered it with foil.
Step 2
Finely chop the onion and garlic. In a small bowl, soak the bread in milk and add one egg. Mix the chopped onion with the ground beef and garlic, then add the soaked bread with the egg, and season with salt. Shape the mixture into small meatballs.
Step 3
Heat olive oil in a skillet and add the meatballs. Without turning them, fry the meatballs for 3–4 minutes so they hold their shape. Then, add the tomato paste and finely chopped chili, a little water, and let the meatballs simmer for 3–4 minutes, seasoning with salt and pepper to taste.
Step 4
Remove the pumpkin from the oven. Blend the cooked pumpkin in a blender (if the pumpkin releases extra juice, drain it); if you don't have a blender, a fine grater will work well. Mix the pumpkin with the flour, add two beaten eggs and grated Parmesan to the dough, and knead it (if the dough is too loose, add more flour). Shape the dough into a long roll about two fingers thick, and cut it into small cylinders about 5 centimeters long (if the dough is too sticky, add flour, and also sprinkle the knife with flour before cutting the gnocchi).
Step 5
Boil a small amount of water and add the gnocchi to the boiling water. Gently shake the pot so the gnocchi don't stick to the bottom. Once the gnocchi float to the surface, drain the water and rinse the gnocchi with cold water in a colander.
Step 6
In a heated skillet with olive oil, add the gnocchi and season with salt. Once the gnocchi are browned, add a piece of butter and keep on heat for another 2 minutes.
Step 7
Serve the meatballs and gnocchi on a plate.
