Ingredients
- Canola Oil - 2 tablespoons
- Ginger Root - 1 piece
- Minced garlic - 2 cloves
- Shallots - 3 heads
- Vegetable Broth - ¼ cup
- Soy Sauce - 3 tablespoons
- Mirin - 1 tablespoon
- Sugar - 1 tablespoon
- Pumpkin - ½ piece
Step by Step guide
Step 1
Heat the oil in a pan over medium heat. Add the garlic, ginger, and shallots, and sauté, stirring, for 1-2 minutes until fragrant.
Step 2
Add the broth, soy sauce, mirin, and sugar; bring to a boil.
Step 3
Add the Kabocha pumpkin, peeled and cut into pieces measuring 2½ x 10 cm. Simmer for about 8 minutes until tender.
Step 4
Reduce the heat to low and cover, simmering until tender for about 15 minutes (turn once to ensure the pumpkin is evenly coated with the sauce).
