Ingredients
- Pumpkin - 21.2 oz
- Brown Sugar - 5 tablespoons
- Raspberry leaves - 5 tablespoons
- Pumpkin seed oil - 1 fl oz
- Vegetable Oil - 1 fl oz
- Grated Ginger Root - 0.7 oz
- Shelled pumpkin seeds - 1.4 oz
- Chicken Broth - 7 fl oz
Step by Step guide
Step 1
Cut the pumpkin into cubes. In a skillet, add the brown sugar and let it melt slightly, then add the raspberry vinegar.
Step 2
Toast the pumpkin seeds in a dry skillet.
Step 3
Add the pumpkin, ginger, and pour in the broth. Bring to a boil, then reduce the heat and cook for about 20 minutes, until the pumpkin is tender.
Step 4
Drain the liquid from the pumpkin. Add the seeds, vegetable oil, and 30 ml of pumpkin oil, salt, and pepper. Blend until smooth.
Step 5
Transfer the pesto into small containers or jars, drizzle a little pumpkin oil on top, and seal. Store in the refrigerator.
Step 6
Pumpkin pesto can be enjoyed with vegetable or meat dishes, and used as a dressing for pasta and pizza.
