Pumpkin with Sweet Rice
Ingredients
- Rice - 8.8 oz
- Apple - 4 pieces
- Sugar - 12.3 oz
- Water - 1 qt
- Saffron - 1 teaspoon
- Clarified Butter - 3 tablespoons
- Ground Cinnamon - 1 teaspoon
- Ground clove - 6 pieces
- Cardamom - 6 pieces
- Bay leaf - 3 pieces
- Chopped almonds - 1.8 oz
- Raisins - 1.8 oz
- Prunes - 1.8 oz
- Pumpkin - 1 piece
Step by Step guide
Step 1
Cut off the top of the pumpkin and remove the seeds. Cover the empty pumpkin with its lid and place it in the oven at medium temperature.
Step 2
Rinse the rice, peel the apples, and cut them into pieces.
Step 3
Prepare the syrup. To do this, boil a liter of water, add the sugar and half of the saffron, and simmer for 30 minutes. The water should reduce by two-thirds.
Step 4
Meanwhile, heat the butter in a pot, add the cinnamon, cloves, cardamom, and bay leaves. Sauté for 1-2 minutes, then add the rice. Sauté, stirring, for another 3-5 minutes. Add half a liter of hot water and bring to a boil. Add the remaining saffron, cover with a lid, and cook on low heat for 15 minutes.
Step 5
Remove the rice from heat. Make a hollow in the center and add the chopped apples, raisins, and almonds. Cover the hollow with rice and pour the syrup on top.
Step 6
Cook the mixture under the lid for another 10 minutes until the rice is done.
Step 7
By this time, the pumpkin should be cooked through. Carefully remove it from the oven and fill it with the prepared rice filling. Cover the pumpkin with its top and bake in the oven for another 5 minutes.
Step 8
Serve with whipped cream.
