Ingredients
- Chicken fillet - 24.7 oz
- Pork fat - 0.4 oz
- Herbs - 3 bunches
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Chop the chicken fillet using a coarse grinder. Finely chop the herbs, mix them with the minced meat, and season with salt and pepper to taste. Lightly beat the mixture.
Step 2
Form 4 flat cutlets the size of your palm (the bigger the palm, the better!), and fry them in a hot (preferably cast iron) skillet, lightly greasing it with fat.
Step 3
Fry on each side for 5 minutes without a lid over high heat, then reduce the heat and cover, cooking for another 10 minutes on each side.
Step 4
Serve with fresh vegetables or vegetable salsa; finely dice tomatoes, bell peppers, kiwi or peaches, red onion, and your favorite herbs. Dress everything with olive oil and a bit of ketchup.
