Quails in Mushroom Sauce
Ingredients
- Quail Egg - 2 pieces
- Dry White Wine - 10 fl oz
- Aspen mushrooms - 1.1 oz
- Honey - 4 tablespoons
- Thyme - 2 sprigs
- Grapefruits - 7.1 oz
- Bacon - 1.8 oz
- 10% cream - 7 fl oz
- Vegetable Oil - 3 tablespoons
- Water - 3 fl oz
Step by Step guide
Step 1
Soak the mushrooms in about 100 ml of water and then chop them finely. Do not discard the mushroom broth!
Step 2
Remove the leaves from the thyme and use them in the preparation of the quails.
Step 3
Rinse the birds, pat them dry, rub with honey, and sprinkle with thyme.
Step 4
Heat the oil in a skillet and fry the quails.
Step 5
Pour in the wine.
Step 6
Preheat the oven to 356°F and bake the birds for about half an hour.
Step 7
Chop the bacon finely.
Step 8
In another skillet, fry the bacon.
Step 9
Add the liquid remaining from cooking the birds, the mushrooms and mushroom broth, cream, and add the grapes.
Step 10
Cook the sauce for about 15 minutes until everything is gently simmering. Serve with the quails.
Step 11
Rice or pasta makes a suitable side dish.
