Description
Fish cakes are a simple and straightforward everyday meal. However, they can be quite temperamental: sometimes a lot of flour, bread, or even semolina is added to the mixture to prevent them from falling apart in the frying pan, which diminishes the presence of fish in the filling. We took a different approach—using mashed potatoes for both stickiness and fluffiness in the cakes, which integrates more subtly into the mixture than flour or bread. As for the sauce, you can add a bit of horseradish or garlic to the combination of sour cream and herbs if you enjoy a bit of heat, and use this sauce for other fish dishes as well.
Ingredients
- Pollock fillet - 17.6 oz
- Potato - 10.6 oz
- Wheat Flour - 4 spoons
- Vegetable Oil - to taste
- Scallions - 3 pieces
- Dill - 3 sprigs
- Parsley - 3 sprigs
- Sour Cream - 3.5 oz
- Mayonnaise - 3.5 oz
- Lemon - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Finely chop the pollock fillet or pass it through a meat grinder.
Step 3
Peel the potatoes and grate them using a fine grater.
Step 4
Mix the pollock fillet, potatoes, and flour. Add salt. Knead the mixture well with your hands.
Step 5
Shape 12 flat patties, similar to those used for fish burgers. Arrange them on a flat plate and refrigerate for 20 minutes.
Step 6
Heat vegetable oil in a skillet, place the patties in the pan, and fry for 2–3 minutes on each side until golden and crispy.
Step 7
Pat dry with a paper towel to remove any excess oil.
Step 8
Remove the tough stems from the parsley and dill, and finely chop the leaves. Finely chop the green onions.
Step 9
Mix the sour cream with the mayonnaise and combine it with the herbs. Season with salt and pepper to taste.
Step 10
Serve the patties with the resulting sauce; mashed potatoes make a perfect side dish.
