Quick Okroshka with Ham and Radish
Ingredients
- Quail Egg - 8 pieces
- Radish - 4 pieces
- Cucumbers - 2 pieces
- New Potatoes - 2 pieces
- Ham - 3.5 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Bread Kvass - 17 fl oz
- Scallions - 4 pieces
- 20% Sour Cream - 2 teaspoons
- Parsley - 2 stems
- Dill - 2 stems
- Grated Ginger Root - to taste
Step by Step guide
Step 1
Cook the potatoes in the microwave. First, wash the young potatoes very well. Wrap each potato in plastic wrap, making several small holes with a knife to allow steam to escape. Place in the microwave and cook for 2 minutes on medium power (about 700 W), then turn them over and cook for another 2–3 minutes. Check for doneness with a knife. If the potatoes are ready, place them in a bowl under cold running water while still wrapped.
Step 2
Meanwhile, prepare the eggs. Place the quail eggs in a microwave-safe bowl, add a little salt, and cover with water so that the eggs are completely submerged. Put in the microwave and cook for 3.5–4 minutes.
Step 3
While the eggs are boiling, chop the young cucumbers, radish, and ham.
Step 4
Remove the eggs from the microwave and place them under cold running water.
Step 5
Chop the herbs; the more herbs, the better. Peel the eggs from their shells. Cut each egg into 4–6 pieces or crumble them.
Step 6
Dice the potatoes. It is not necessary to peel young potatoes.
Step 7
In a deep bowl, combine the eggs, radish, cucumbers, ham, and potatoes. Season with salt and pepper. Add the herbs. Mix well.
Step 8
Serve in deep plates, pouring kvass over the top. Optionally, add grated horseradish for spiciness. Add sour cream or plain yogurt.
