Quick Tomato Sauce from Roasted Tomatoes
Ingredients
- Ocean salt - to taste
- Vegetable Oil - to taste
- Bay leaf - 3 pieces
- Garlic - 3 cloves
- Tomatoes - 2 lbs
- Balsamic Vinegar - to taste
- Cilantro - 1 teaspoon
- Star anise - to taste
- Chili Flakes - to taste
- Onion - 1 head
Step by Step guide
Step 1
Wash the tomatoes and cut them in half.
Step 2
Place them on a baking sheet lined with parchment paper, sprinkle with salt, and drizzle with vegetable oil.
Step 3
Send them to the oven until cooked (about 30 minutes at 374°F).
Step 4
While the tomatoes are baking, peel and finely chop the onion and place it in a pot with heated vegetable oil.
Step 5
Add the bay leaves, cilantro, garlic, and chili. You can either crush the garlic cloves or use a garlic press.
Step 6
Cook the onion until soft and remove the pot from the heat.
Step 7
If the bottom becomes too dry, add a little vinegar.
Step 8
Remove the bay leaves, garlic (if using cloves), and star anise. Add the roasted tomatoes to the pot and blend until smooth.
Step 9
Pass the finished paste through a sieve and boil for another 5-10 minutes, adding vinegar.
Step 10
Taste and add salt and pepper to taste.
