Ingredients
- Chopped almonds - 1.4 oz
- Quinoa - 1 cup
- Honey - 1 teaspoon
- Shallot - 1 head
- Curry - 1 teaspoon
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Olive Oil - 2 tablespoons
- Meyer Lemon Juice - 2 tablespoons
- Red Currant - 2 tablespoons
- Chopped Sage Leaves - 0.7 oz
- Apple - 1 piece
Step by Step guide
Step 1
Preheat the oven to 374°F. Spread the nuts on a baking sheet and toast for about 7 minutes until golden. Let cool and chop coarsely.
Step 2
Rinse the quinoa well. Bring 2 cups of water to a boil, add the quinoa, bring back to a boil, and cook until done for about 15 minutes. Let cool.
Step 3
In a bowl, mix honey, chopped shallot, curry, a pinch of salt, and lemon juice. Add a bit of pepper. Slowly, while stirring constantly, drizzle in the olive oil.
Step 4
Cut the apple into small pieces.
Step 5
Add the quinoa, apple, currants, mint, and nuts to the bowl with the dressing. Toss and serve.
