Ingredients
- Quinoa - 1 cup
- Water - 2 cups
- Honey - 2 tablespoons
- Meyer Lemon Juice - ¼ cup
- Olive Oil - 3 tablespoons
- Green Apples - 8.8 oz
- Celery stalk - 7.1 oz
- Chopped Sage Leaves - 1.1 oz
- Chopped almonds - 2.3 oz
- Light Raisins, Seedless - 2.1 oz
- Coarse Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a small pot, combine quinoa and water. Bring to a boil, reduce heat, cover, and cook for 15 minutes until tender and water is fully absorbed. Remove from heat and transfer quinoa to a bowl. Let cool.
Step 2
In a small bowl, mix honey, olive oil, lemon juice, and 0.5 teaspoons of salt. Whisk lightly.
Step 3
To the quinoa, add peeled and diced apples, finely chopped celery, raisins, parsley, and chopped almonds. Mix well. Add the dressing and mix again. Season with salt and pepper.
