Ingredients
- Quinoa - ¾ cup
- Water - 1¼ cups
- Salt - to taste
- Ground Black Pepper - to taste
- Spinach - 1 bunch
- White mushrooms - 6 pieces
- Chopped Walnuts - 1.2 oz
- Chopped Parsley - 2 tablespoons
- Feta cheese - 1.1 oz
- Lemon Juice - 1 tablespoon
- Wine Vinegar - 1 tablespoon
- Dijon Mustard - 1 teaspoon
- Extra virgin olive oil - 2 tablespoons
- Buttermilk - 2.8 oz
Step by Step guide
Step 1
Place the quinoa in a sieve and rinse under cold water. Put it in a small saucepan, add water, and season with salt to taste.
Step 2
Bring to a boil, cover with a lid, and cook for 15 minutes until the water is absorbed. Drain any excess water, cover with a clean towel and lid, and let sit for 10 minutes.
Step 3
Transfer to a salad bowl, fluff with a fork, and let cool.
Step 4
Add spinach, mushrooms, walnuts, parsley, and cheese to the bowl. Toss with the dressing ingredients and serve.
