Quinoa Salad with Sorrel and Vegetables
Ingredients
- Quinoa - 1 cup
- Cherry Tomatoes - 17.6 oz
- Fresh red bell pepper - 1 piece
- Sorrel - 1 bunch
- Berry Vinegar - 3 teaspoons
- Extra virgin olive oil - 2 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
- Green Onion - ½ bunch
Step by Step guide
Step 1
Cook the quinoa according to the package instructions and let it cool.
Step 2
Chop the tomatoes (cherry or any firm ones) as finely as possible, similar to tabbouleh salad.
Step 3
Also chop the bell pepper, removing the seeds and white membranes first.
Step 4
Cut the sorrel into julienne strips.
Step 5
Chop the green onion finely as well.
Step 6
Combine the vegetables and herbs in a salad bowl with the cooked quinoa, season with salt and pepper, and dress with vinegar (any mild berry vinegar: raspberry, pomegranate, etc.) and mix well.
Step 7
It pairs wonderfully with meat or fish, or can be served as a standalone salad.
