Quinoa with Dried Fruits and Spices
Ingredients
- Almonds - 1.8 oz
- Water - 24 fl oz
- Dates - 2.1 oz
- Apricots - 1.8 oz
- Ground Cardamom - 1 teaspoon
- Ground Cinnamon - ½ teaspoon
- Ground Ginger - ¼ teaspoon
- Salt - to taste
- Vegetable Oil - 12 fl oz
Step by Step guide
Step 1
Preheat the oven to 170°C. Roast the almonds on a baking sheet for 10 minutes, stirring once during roasting.
Step 2
Combine water, prunes, dried apricots, cardamom, cinnamon, ginger, salt, oil, and quinoa in a medium-sized pot. Cook over medium heat.
Step 3
Bring to a boil. Cover and cook for 25 minutes or until the quinoa has absorbed all the water.
Step 4
Add the almonds, stir, and serve.
