Description
It is advisable to use French dry white wine Chablis.
Ingredients
- Rabbit - 4 lbs
- Dijon Mustard - 5 tablespoons
- Butter - 1.8 oz
- Onion - 1 head
- Dry White Wine - ½ cup
- Bay leaf - 7 pieces
- Dried Chamomile - 3 sprigs
- Dried parsnip - 3 sprigs
- Sour Cream - 3½ tablespoons
- Chopped Sage Leaves - 2 tablespoons
Step by Step guide
Step 1
Cut the rabbit into pieces. Coat the rabbit pieces with mustard and season with salt and pepper.
Step 2
In a large skillet, heat 2 tablespoons of butter and sauté the rabbit, stirring frequently, for about 15 minutes.
Step 3
Transfer the sautéed rabbit to a plate.
Step 4
Reduce the heat and add the remaining 2 tablespoons of butter to the same skillet. Add the chopped onion and sauté until translucent, about 5–8 minutes.
Step 5
Pour the dry white wine into the skillet and mix well with the juices.
Step 6
Return the rabbit to the skillet and add the sprigs of dried thyme, bay leaf, and dried parsley (preferably not chopped). Cover the rabbit and cook on low heat for about 35 minutes.
Step 7
Remove from heat, add sour cream and fresh chopped parsley. Mix well.
