Rabbit in Red Beer
Ingredients
- Rabbit - 4 lbs
- Root Beer - 11 fl oz
- Onion - 1 piece
- Carrot - 2 pieces
- Celery stalk - 1 piece
- Fresh Rose Hips - 1 piece
- Pistachios - 1 tablespoon
- Bay leaf - 3 pieces
- Raisins - 1.4 oz
- Chestnut flour - 1 teaspoon
- Olive Oil - to taste
- Ground Nutmeg - to taste
- Salt - to taste
Step by Step guide
Step 1
Soak the raisins in a small amount of beer.
Step 2
In a clay (earthenware) pot, heat the olive oil, add the rosemary and bay leaves. Cut the rabbit into roughly equal pieces, transfer to the pot, and let it brown on all sides.
Step 3
Once the rabbit is well browned, add the coarsely chopped celery, carrots, and onion, pour in a little beer, let it evaporate, then add the pine nuts, raisins, nutmeg, and salt. Mix well without removing from heat, then add the remaining beer and chestnut honey.
Step 4
Cover with a lid, cook on low heat, stirring occasionally.
Step 5
If you find the meat is getting too dry, add a little water and let it evaporate.
Step 6
Serve hot with dark bread.
