Step 1
Thoroughly rinse the rabbit, cut it into pieces, place it in a pot, and cover with hot water just enough to submerge the meat. When the water boils, skim off the foam, add salt, and add the peeled and rinsed carrot, onion, parsley, 5-8 peppercorns (or 1/10 of a pod), and 1-2 bay leaves. Simmer gently for 40-60 minutes.
Step 2
Remove the cooked rabbit from the pot, cut it into portions, place it on a dish, and pour over with the white sauce made from the broth obtained while boiling the rabbit.
Step 3
Serve with boiled potatoes or mashed potatoes, or rice dressed with butter.
