Ingredients
- Onion - 1 piece
- Rabbit - 3 lbs
- Garlic - 2 heads
- Olive Oil - 3 fl oz
- Rosemary - 2 teaspoons
- Thyme - 2 teaspoons
- Oregano - 1 teaspoon
- Rosé Dry Wine - 8 fl oz
- Olives stuffed with lemon - 1.8 oz
Step by Step guide
Step 1
Cut the rabbit into 8 pieces.
Step 2
Season with salt and pepper, and sauté in oil.
Step 3
Add chopped onion and whole garlic to the rabbit.
Step 4
Sauté for 5 minutes, add herbs, and pour in the wine. Simmer for 1 hour.
Step 5
Before finishing, add olives and remove the garlic, mash it, and add to the sauce.
