Description
Rice, buckwheat, or pasta make a great side dish for the rabbit. Alternatively, you can simply enjoy it with bread, dipping it into the sauce made with the rabbit.
Ingredients
- Rabbit - 1 piece
- Onion - 3 pieces
- Garlic - 3 heads
- Carrot - 2 pieces
- 20% Sour Cream - 3 cans
- Marinated cherries - 8.8 oz
- 10% cream - 5 fl oz
- Pesto - 3 teaspoons
- Grated Pecorino Pepato Cheese - 3.5 oz
- Salt - to taste
Step by Step guide
Step 1
Cut the rabbit into small portion pieces (I had a rabbit that was not very big and fatty, resulting in 6 pieces: 2 front legs, 2 hind legs, and 2 breasts).
Step 2
Sauté in a pan with butter (I used a grill pan) until the pieces are browned.
Step 3
Separately sauté the onion and carrot, diced into approximately 1 cm pieces (larger pieces are also fine).
Step 4
Make the sauce. For this, blend the sour cream, cream, garlic, pesto, cherry tomatoes, and salt in a blender.
Step 5
Transfer the browned rabbit pieces to a pot (or slow cooker), add the sautéed onion and carrot, pour in the sauce, and add the grated Parmesan. Mix everything together.
Step 6
Let the rabbit stew for 50–60 minutes with the lid slightly ajar over low heat.
