Ingredients
- Rabbit - 4 lbs
- Pumpkin - 2 lbs
- Chicken Broth - 17 fl oz
- Onion - 7.1 oz
- Carrot - 3.5 oz
- Celery stalk - 2 pieces
- Garlic - 10 cloves
- Oranges - 4 pieces
- Bay leaf - 1 piece
- Parsley - 0.7 oz
- Thyme - 4 stalks
- Scallions - 1.1 oz
Step by Step guide
Step 1
Cut the rabbit into pieces. Dice the carrot, celery, and onion into large cubes. Pour the vegetables with broth and the juice of two oranges, bring to a boil, and cook for three minutes. Transfer everything to a baking dish, place the rabbit in as well, cover the dish with foil, make a few holes in it, and put it in the oven preheated to 356°F for one and a half hours.
Step 2
After an hour, place a dish with the pumpkin, cut into large cubes, into the same spot. Drizzle it with the juice of two oranges and sprinkle with orange zest, thyme, and garlic. Let the pumpkin sit for half an hour.
Step 3
Remove the rabbit, let it cool slightly, and shred the meat from the bones. Form the meat into something resembling patties. Sprinkle them with finely chopped green onions and parsley. Strain the sauce from the rabbit and reduce it until thick. Serve the meat with the sauce and pumpkin.
