Ingredients
- Rack of Lamb - 10.6 oz
- Olive Oil - 2 spoons
- Butter - 1.1 oz
- Shallot - 2 heads
- Blackberry - 16 pieces
- Thyme - 1 stalk
- Doru wine - 8 fl oz
- Sugar - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cut the rack into pieces so that each has two bones, which is the right thickness for juicy meat. Rinse and pat dry with paper towels. Brush with olive oil, season with salt and pepper. Sear on a grill pan until sealed and lightly browned. Transfer to an oven preheated to 100-248°F (212-248 degrees Fahrenheit) while the sauce is being prepared.
Step 2
Heat butter in a skillet. Sauté halved shallots. Add thyme and ten blackberries. Cook lightly. Pour in dry Portuguese Douro wine. Season with salt and add sugar to soften the concentrated acidity of the wine. Let it simmer for a while to slightly thicken the sauce.
Step 3
Place the meat in the pan and cook for another ten minutes, turning it occasionally.
Step 4
Place the lamb and shallots on a plate, add the sauce. Top with fresh blackberries.
Step 5
Serve with the doru — with whatever is left in the bottle.
