Description
Boiled Brussels sprouts make an excellent side dish for this meat.
Ingredients
- Garlic - 3 cloves
- Salt - ½ teaspoon
- Rosemary - 1 tablespoon
- Parsley - 0.4 oz
- Thyme - 0.4 oz
- Butter - 2.5 oz
- Rack of Lamb - 21.2 oz
Step by Step guide
Step 1
Crush the butter, garlic, salt, and herbs in a mortar until it forms a paste, add the butter, mix, and refrigerate for 20 minutes.
Step 2
Brush the room temperature ribs with the butter, let sit for 20 minutes, place in a baking dish, and put in an oven preheated to 392°F for 25 minutes, or until the meat thermometer reads 65–158°F inside the meat (for medium rare). I also add some rosemary and a couple of garlic cloves to the dish — while the meat is cooking, the kitchen fills with an amazing aroma. Remove the dish from the oven, cover with foil, and let rest for 15 minutes.
Step 3
Carve the rack, cutting between the bones. Place a piece of green butter on the ribs.
