Ingredients
- Rice Vinegar - ½ cup
- Sugar - 2 tablespoons
- Star anise - 2 pieces
- Fennel Seeds - ½ teaspoon
- Red pepper flakes - ¼ teaspoon
- Salt - 2 teaspoons
- Freshly squeezed orange juice - 3 tablespoons
- Black grapes - 7.1 oz
- Radicchio Lettuce - 19.8 oz
- Olive Oil - 2 tablespoons
- Ground Black Pepper - to taste
- Roasted Almonds - 1.6 oz
- Goat cheese - 2.1 oz
Step by Step guide
Step 1
In a glass jar, add the vinegar, sugar, star anise, fennel seeds, red pepper flakes, 2 teaspoons of salt, 2 tablespoons of orange juice, and ¼ cup of water. Cover the jar with a lid and shake it to mix all the ingredients well, continuing to mix until the salt and sugar dissolve. Then add the grapes and let them marinate at room temperature for at least 30 minutes.
Step 2
In a large bowl, toss the radicchio with the oil, 3 tablespoons of the grape marinade, and the remaining 1 tablespoon of orange juice; season with salt and pepper. Transfer the salad to a serving dish and top with the marinated grapes, sprinkling with almonds and goat cheese. Enjoy your meal!
