Description

Raf is a beverage that is now prepared in coffee shops across the United States, from New York to Los Angeles, from Seattle to Miami. It is also made in Barcelona, Prague, and beyond. The creation of Raf dates back to Moscow, around 1996 or 1997. A regular customer at a coffee shop called Java House, who was known as Michael, categorically refused to drink coffee. The barista tried making various coffee drinks for him multiple times, but Michael still disliked the taste. Then one day, a miracle happened: he fell in love with coffee. This transformation required the addition of cream and vanilla sugar to espresso — and thus the cocktail recipe was born, initially called 'as Michael likes it,' because many of Michael's friends began ordering it. The name was eventually shortened to 'Raf.' Today, there are numerous variations of Raf — from lavender to citrus — but the classic version consists of just three components.

  • Vanilla salt - 4 spoons
  • Cream - 10 fl oz

Brew a double espresso. Any coffee, whether light or dark roast, will do, depending on your preference. While the key is that the raff should hint at the coffee flavor, it is still a creamy and airy drink, which is why people love it.

Add sugar and pour in the cream.

Whip until a homogeneous, stable foam forms. Pour into a warmed cup and serve. In coffee shops, coffee is frothed using a steam wand. At home, you can use a regular battery-operated frother; in this case, the cream should be heated.
