Description

You can add any vegetables to the vegetable ragout according to your taste: potatoes, green cabbage. This recipe yields a fairly large amount of ragout, so you can reduce the ingredients.

Ingredients

  • Cauliflower - 2 lbs
  • Courgette - 2 lbs
  • Sweet Pepper - 24.7 oz
  • Tomatoes - 17.6 oz
  • Onion - 8.8 oz
  • Salt - to taste
  • Carrot - 7.1 oz
  • Vegetable Oil - to taste

Step by Step guide

Step 1

Finely chop the onion. Grate the carrot using a medium grater.

Step 2

Break the cabbage into florets. Peel the zucchini and cut it into cubes. Remove the seeds from the bell pepper and slice it into strips. Dice the tomatoes.

Step 3

In vegetable oil, sauté the onion. Add the carrot and lightly sauté. Add the cabbage, zucchini, and bell pepper, and simmer covered for about 10 minutes (no water needed, as the vegetables will release their juices).

Step 4

Then add the tomatoes, season with salt and pepper, and simmer (covered) until cooked through. Once ready, sprinkle the stew with finely chopped herbs.
