Raita with Summer Vegetables

Ingredients

  • Young Cabbage - 3.5 oz
  • Fresh Spinach Leaves - 1 bunch
  • Bell pepper - 3.5 oz
  • Cherry Tomatoes - 3.5 oz
  • Black Mustard Seeds - ¼ teaspoon
  • Cumin Seeds - ¼ teaspoon
  • Natural Yogurt - 1 cup
  • Curry Powder - a pinch
  • Parsley - 2 sprigs
  • Coarse Salt - a pinch

Step by Step guide

Step 1

Thinly slice the cabbage, cut the spinach leaves and bell pepper into strips, and halve the cherry tomatoes. Place all the vegetables in a salad bowl.

Step 2

In a dry hot skillet, toast the mustard seeds and cumin seeds until they start to crackle (about 1 minute).

Step 3

Prepare the dressing: add the toasted mustard and cumin seeds along with a pinch of curry to the cooled yogurt. Mix the dressing with the vegetables, add the parsley leaves, and season with salt. Serve chilled.
