Ingredients
- Young Cabbage - 3.5 oz
- Fresh Spinach Leaves - 1 bunch
- Bell pepper - 3.5 oz
- Cherry Tomatoes - 3.5 oz
- Black Mustard Seeds - ¼ teaspoon
- Cumin Seeds - ¼ teaspoon
- Natural Yogurt - 1 cup
- Curry Powder - a pinch
- Parsley - 2 sprigs
- Coarse Salt - a pinch
Step by Step guide
Step 1
Thinly slice the cabbage, cut the spinach leaves and bell pepper into strips, and halve the cherry tomatoes. Place all the vegetables in a salad bowl.
Step 2
In a dry hot skillet, toast the mustard seeds and cumin seeds until they start to crackle (about 1 minute).
Step 3
Prepare the dressing: add the toasted mustard and cumin seeds along with a pinch of curry to the cooled yogurt. Mix the dressing with the vegetables, add the parsley leaves, and season with salt. Serve chilled.
