- Eggplants - 1 piece
- Courgette - 1 piece
- Orange Bell Peppers - 1 piece
- Spanish onions - 1 head
- Garlic - 1 clove
- Olive Oil - 1 tablespoon
- Tomatoes - 7.1 oz
- Penne rigate - 6.2 oz
- Fresh basil leaves - 2 spoons
- Salt - to taste
Step by Step guide
Step 1
Preheat the oven to 392°F. Cut all the vegetables into cubes, and slice the onion into thin rings. Place the vegetables (all except for the tomatoes) in a baking dish, drizzle with olive oil, and lightly season with salt. Put it in the oven and bake for about 20 minutes.
Step 2
Meanwhile, score the tomatoes (it's best to use ripe ones) with a cross shape, pour boiling water over them, and remove the skin. Then, cut them into wedges. After 20 minutes, add them to the vegetables and cook for another 10 minutes.
Step 3
Cook the penne according to the package instructions. Drain in a colander, reserving a little (about 4 tablespoons) of the cooking liquid.
Step 4
In a large salad bowl, combine the pasta, pasta broth, vegetables, and chopped basil. Mix well and serve immediately.
