Ratatouille with Cardamom
Ingredients
- Orange Bell Peppers - 2 pieces
- Eggplants - 17.6 oz
- Courgette - 1 piece
- Orange Bell Peppers - 2 pieces
- Tomatoes - 12.3 oz
- Oregano - a pinch
- Fresh basil leaves - to taste
- Garlic - 1 clove
- Cardamom - ½ teaspoon
Step by Step guide
Step 1
Remove seeds from the peppers and cut them into cubes. Slice the eggplant and zucchini into rings, and cut the tomatoes into wedges.
Step 2
Place the zucchini and eggplant in the fryer basket, and top with minced garlic. Drizzle with olive oil and cook for 5-7 minutes.
Step 3
Add the tomatoes and peppers. Sprinkle with cardamom and drizzle with oil again. Gently mix everything and cook for another 10-15 minutes.
Step 4
Sprinkle the finished dish with dried oregano and basil. Garnish with fresh herbs to taste.
