Ingredients
- Salt - to taste
- Garlic - 2 cloves
- Tomatoes - 17.6 oz
- Courgette - 4 pieces
- Green peppercorns - 2 pieces
- Eggplants - 3 pieces
- Onion - 10.6 oz
- Olive Oil - 5 fl oz
Step by Step guide
Step 1
Finely chop the onion. Peel the zucchini and eggplants, removing the skin and seeds, then cut them into cubes. Remove the seeds from the peppers and cut them into cubes as well. Peel the tomatoes and chop them finely.
Step 2
Heat olive oil in a large deep skillet. Add the onion and cook over low heat, stirring, for 10 minutes. Add the eggplant and cook for another 10 minutes. Sprinkle in the bell pepper, stir, and cook for another 10 minutes. Add the zucchini, tomatoes, and garlic, and season with salt. Cover with a lid and let it simmer on low heat for 1 hour.
Step 3
If there is too much juice from the vegetables, leave the lid off for 10 minutes to allow excess moisture to evaporate. Remove the garlic cloves before serving.
