Ingredients

  • Onion - 2 pieces
  • Garlic - 3 cloves
  • Bay leaf - 1 piece
  • Oregano - 2 tablespoons
  • Olive Oil - 4 tablespoons
  • Pumpkin - 17.6 oz
  • Tomatoes - 2 pieces
  • Courgette - 17.6 oz
  • Chopped Sage Leaves - 2 tablespoons

Step by Step guide

Step 1

Finely chop the onion and garlic, mix with oregano, add the bay leaf, and sauté in a large pot with olive oil for 10 minutes.

Step 2

Dice the tomatoes and pumpkin, mix them with the onion and spices, and let simmer on low heat covered for 20 minutes, stirring occasionally.

Step 3

Add the diced zucchini to the tomatoes and pumpkin and cook for another 30 minutes over medium heat, stirring periodically.

Step 4

Serve hot, garnished with fresh chopped parsley.
