Ingredients
- Olive Oil - 5 fl oz
- Onion - 2 heads
- Eggplants - 3 pieces
- Green peppercorns - 2 pieces
- Courgette - 4 pieces
- Tomatoes - 17.6 oz
- Garlic - 2 cloves
- Salt - to taste
- Squid - 4 pieces
Step by Step guide
Step 1
Onions, garlic, and tomatoes should be peeled and finely chopped. Eggplants and zucchinis should also be peeled and diced. Peppers need to be seeded and cut into pieces, while the squid should be sliced into strips.
Step 2
Heat all the oil except for two tablespoons in a large skillet. Add the finely chopped onion and sauté over low heat, stirring, for 5 minutes until it becomes soft and translucent. Add the eggplant and cook for 10 minutes. Then add the bell peppers and cook, stirring, for another 10 minutes. Add the zucchini, tomatoes, garlic, and salt. Cover and simmer for 1 hour.
Step 3
Coat the squid in flour and sauté them in a well-heated skillet, stirring for 2–3 minutes until they are golden brown. Then remove from heat.
Step 4
If there is too much liquid in the vegetables, drain some of it, then sprinkle the sautéed strips of squid on top and serve.
