Ratatouille with Tuna

Ingredients

  • Salt - to taste
  • Canned tuna in its own juice - 7.1 oz
  • Tomatoes - 26.5 oz
  • Onion - 2 pieces
  • Green peppercorns - 1 piece
  • Courgette - 3 lbs
  • Olive Oil - 4 fl oz

Step by Step guide

Step 1

Finely chop the onion. Peel the zucchini and remove the seeds, then chop finely. Remove the seeds from the peppers and also chop them into cubes. Peel the tomatoes and chop finely. Mash the tuna with a fork.

Step 2

Heat 4 tablespoons of olive oil in a large skillet. Add the zucchini and cook, stirring occasionally, for 2-3 minutes, then add 3 tablespoons of water and cook for another 15 minutes until they are soft.

Step 3

Heat 3 tablespoons of the remaining olive oil in a small skillet. Add the pepper, cover, and cook on low heat, stirring occasionally, for 15 minutes. Remove with a slotted spoon and set aside. Add the onion to this skillet and cook on low heat, stirring, for 10 minutes until golden. Add the tomatoes and cook, crushing them with a spatula, for another 15-20 minutes until the mixture resembles a sauce.

Step 4

Transfer the tomatoes with the onion to the skillet with the zucchini, mix in the pepper, and cook, stirring, for another 10 minutes. Add the tuna, mix, and serve.
