Step by Step guide

Step 1

Prepare the pasta dough: Pour half of the flour into a bowl and make a well in the center. Add the eggs, a little water, and a pinch of salt. Knead the dough by hand, adding the remaining flour in small portions. The dough should be dense and smooth. Roll it into a ball, then throw this ball several times onto a floured surface – don't hold back. Then roll the dough into a ball and let it rest for 2 hours.

Step 2

Divide the dough in half and roll it out into two very thin squares. Place small pieces of filling on one of the squares: they should be at least 2.5 cm apart.

Step 3

Moisten the space between the filling pieces and the second square of dough with water: use wet hands or, better yet, a brush. Cover the filling with the second square, wet side down. Then, use a special pasta cutter to cut the square into ravioli. If you don't have such a cutter, you can use a regular sharp knife, but first, press the strips of dough between the filling pieces together so that the ravioli don't fall apart when you cut them. You can do this with a fork, knife, or your fingers.

Step 4

Bring salted water to a boil in a large pot. Add the ravioli in batches and bring back to a boil. Then reduce the heat and cook for 20 minutes until they are tender. Drain the water and rinse under cold water to prevent the ravioli from sticking together.

Step 5

Now they can be mixed with sauce, baked, and served. Ravioli should be cooked with the intention of serving them immediately after they are ready – otherwise, they will dry out.
