Ravioli with Goat Cheese
Ingredients
- Sweet Pepper - 7.1 oz
- Ground Black Pepper - to taste
- Minced garlic - 3 cloves
- Goat cheese - 5.3 oz
- Parsley - 2 stems
- Whole egg - 1 piece
- Apple Wine - 3 fl oz
Step by Step guide
Step 1
Prepare the sauce: sauté the garlic in olive oil until golden, add the bell pepper, coarsely ground black pepper, and sugar, adjusting to taste. The sauce cooks for 10–15 minutes.
Step 2
Mash the goat cheese by hand with the white wine. Prepare the dough as for dumplings. Roll it out and cut out 2 squares, each measuring 25x25 cm. Place the first square, brush it with olive oil, mound the cheese on it, and make a small indentation. Separate the yolk from the white. Place the yolk in the indentation and sprinkle with coarsely ground black pepper (it should be crunchy). Brush the second square with oil and place it on top of the first so that the corners do not align. Use a glass to make an imprint on top, but do not cut through. Press the edges of the imprint with your fingers to prevent the egg from leaking during cooking. Place the ravioli in boiling water for 0.5–1 minute.
Step 3
On a plate, spread the sauce, then place the ravioli on top. Around the edges of the imprint, add a ring of sauce on the ravioli and garnish with parsley.
