Ingredients
- Wonton Dough - 3 pieces
- Mustard Greens - 7.1 oz
- Celery salt - 7.1 oz
- Dried Chinese mushrooms - 3.5 oz
- Dried Chinese mushrooms - 3.5 oz
- Onion - 4 heads
- Parsley - 1 bunch
- Carrot - 1 piece
- Vegetable Oil - 2 spoons
- Chicken Egg - 1 piece
- Salt - to taste
- Mustard Greens - 7.1 oz
Step by Step guide
Step 1
Soak the dried mushrooms in boiling water, bring to a boil, add a peeled onion and a peeled carrot, as well as a bunch of parsley with the roots intact. Let it steep for a day, then strain.
Step 2
Finely chop three medium-sized onions and sauté them in vegetable oil.
Step 3
Chop the radish and beet greens, as well as the celery leaves, separately and coarsely. Mix each type of greens with an equal amount of sautéed onions.
Step 4
Place the filling in the center of the square wonton wrapper (all ravioli should have different fillings), brush the edges with egg, top with a second square and seal the dough. Repeat this with all the dough and filling. Then, use a culinary ring or a cup to shape everything into round ravioli.
Step 5
Heat the broth and season with salt. Place the ravioli in bowls and pour the broth over them.
