- Olive Oil - 3 tablespoons
- Pumpkin - ½ piece
- Garlic - 1 clove
- Grated Parmesan cheese - 1.8 oz
- Lemon Zest - 1 tablespoon
- Croutons - 3 oz
- Sage leaves - 1 bunch
- Ravioli - 17.6 oz
- Chili Flakes - a pinch
Step by Step guide
Step 1
Heat the oil in a large skillet and sauté the pumpkin for 10 minutes until golden brown.
Step 2
Add the garlic and sauté for 1 minute until soft. Add 300 ml of water, grated Parmesan, chili, and lemon zest. Mix well, reduce the heat, and cook for 3-4 minutes. Season to taste.
Step 3
In a small skillet, heat the remaining oil and sauté the croutons until golden brown, stirring.
Step 4
Cook the ravioli according to the package instructions. Drain, then spoon onto plates. Drizzle the pumpkin sauce over the ravioli and sprinkle with croutons.
