- Tiger shrimp in brine - 3.5 oz
- Foie Gras - 2.1 oz
- Lemon - 1 piece
- Peeled Cooked Shrimp - 1.4 oz
- Carrot - 1.1 oz
- Onion - 1.2 oz
- Water - 5 fl oz
- 10% cream - 1 fl oz
- Brandy - 0.4 oz
- Passata Tomato Sauce - 0.2 oz
- Vegetable Oil - 0 fl oz
- Wheat Flour - 5.3 oz
- Whole egg - 1 piece
Step by Step guide
Step 1
Knead the dough from flour, yolk, olive oil, and water.
Step 2
For the sauce, take the carrot and onion roughly chopped; sauté in vegetable oil, add shrimp shells, tomato paste, fry everything together, and pour in water. Cook for 15 minutes. Strain through a sieve. Place on the stove, add shrimp meat, and salt. Blend the resulting broth.
Step 3
Place back on the stove, add spices, brandy, and bring to a boil.
Step 4
For the filling, clean the tiger shrimp, then finely chop with foie gras. Season with salt, pepper, and drizzle with lemon juice.
Step 5
Form square ravioli with the filling from the dough and boil them.
Step 6
Place in the center of the plate and drizzle sauce around the ravioli.
